Fellowship with Food

Food is a crucial aspect of our wellbeing. Not only is it nourishing, regenerative, and provides us energy on a daily basis, but it is something we can take comfort in daily. Sometimes there’s nothing like a warm bowl of soup when we’re feeling sick, a pot of polenta when we’re stressed, or beef wellington to celebrate a new accomplishment. Food helps give physicality to our emotions.

Beyond this, food carries our heritage with it. Recipes passed down through families for generations tell a history of each of our upbringing and stories. Cuisines are defined by the available foods in an area and changes in the recipes often correlate to major historical events both manmade and natural. Through this, cuisine becomes culture and gathers people together. Communities form around food. From the act of cooking together, to sharing stories around a dinner table.

Food is crucial to our wellbeing. From comfort, to community, to culture, it influences us on the daily and we would love to hear from you what food you find comfort in after a difficult shift or what your go to recipe is when you have time off to cook with loved ones.


Lomo Saltado

Travel and the culinary arts are where I find joy outside of the ED. In a recent trip to Lima, I learned about the history and preparation of the Lomo Saltado. This traditional Peruvian dish features a beautiful fusion of different cultural influences. To me, food is something that unites us all and brings people together and I think this is captured well in the warm, comforting and unpretentious Lomo Saltado.

Molokhia

1 bag of minced molokhia leaves
- frozen, usually found at local Arabic/ middle eastern market
1/2 pound of Chicken breast 
1 chopped onion 
4-5 garlic cloves chopped 
1 cup of basmati rice
Spices:
-7 spice 
-salt 
-chicken bouillon 
1. In a pot, covered: chicken, onion, and garlic cooked until onions are sautéed and chicken is cooked on the outside [add salt, 7 spice]
2. Uncover the pot and add molokhia  bag. 
3. Add 1 cup of water and stir occasionally as you start working on rice.

For the Rice:
1. Boil Water and garlic
2. Remove garlic and add it to the molkhia batch
3. Add rice to water that’s flavored with garlic 
4. Add chicken cube, stir 
5. Leave rice to cook covered
